The wine undergoes aging in barriques for 18-20 months, followed by 18 months in the bottle.
Negroamaro, one of Italy's oldest grape varieties and a symbol of the Salento, in the Puglia region, is known for its dark color and slightly bitter taste. This characteristic is subtly softened by the addition of Black Malvasia. The grapes are harvested manually in the cooler morning hours of the second decade of September, to protect them from the intense heat, ensuring a blend of the highest quality right from the vineyard. The low structural yield and careful selection in the field ensure this wine's superior quality.
Tasting Notes and Pairing Suggestions: This wine features a dense garnet red color, brimming with light. The aroma captivates with the purity of sour cherries, licorice, and rose petals, complemented by tobacco and sweet spices; hints of candied orange and pine resin add complexity. The palate is robust and coherent, flowing smoothly with class and drinkability, marked by firm tannins and vibrant energy. The finish is notable for its persistence and slight bitter hint, with spicy nuances of cocoa. Its savory and complex profile makes it an excellent choice for rich pasta dishes, meats, braised preparations, and aged cheeses.
